Jessica Beaudoin
Jessica Beaudoin, DHSc, MS, RDN, is an Assistant Clinical Professor in the Master of Science in Clinical Nutrition program at University of the Pacific. With a background in both culinary and clinical nutrition, Jessica is a Registered Dietitian who focuses on translating the science of nutrition into food terms for patients and clients. Jessica completed her Doctorate in Health Sciences, Educational Track, at University of the Pacific. She attended CSU Long Beach for the Dietetic Internship and MS in Nutritional Science and received her BS in Culinary Nutrition from Johnson & Wales University in Providence, Rhode Island. Jessica’s research focuses on culinary literacy, nutrition therapy, and interprofessional education. An avid distance hiker, Jessica has thru-hiked several trails and spends much of her free time in the mountains and cooking delicious food both on- and off-trail.
