‘Hospitality is at the heart of what we do at Pacific’: Alvarado named general manager of the year

From introducing new cuisines to creating a campus experience centered on connection and community, University of the Pacific Dining Resident District Manager Marco Alvarado has spent the past year invigorating dining options and centering the student experience at Pacific.

Alvarado is being recognized as General Manager of the Year for the Lubecky West Region of Bon Appétit, the university’s food service provider.

“I was truly surprised by this award and, of course, honored and grateful to receive such recognition,” Alvarado said.

“That said, this accomplishment is not mine alone. It reflects the dedication, hard work and commitment of our entire team that stands behind me every day. The support and drive allow us to provide exceptional service and hospitality while enabling all of us to focus on our goals and succeeding together.” 

Alvarado has worked for Bon Appetit Management Company for more than 18 years with the last 11 years as executive chef. He joined Pacific in 2008 and was promoted to resident district manager in 2024.

“Through dedication, continuous professional growth and a strong understanding of both culinary excellence and business operations, Marco has successfully translated his expertise in the kitchen into exceptional organizational leadership,” said Vice President of Communications at Bon Appétit Management Company Jenny Slafkosky. “He consistently inspires his team, drives operational excellence and fosters a culture of collaboration, innovation and accountability across campus dining operations.”

Since he took over as district manger, Alvarado has conceptualized and implemented a new Italian deli in the Marketplace that offers Italian sodas, sandwiches, tiramisu and more. 

Alvarado says he regularly meets with clients and students to better understand their needs are identify ways to incorporate those into Pacific’s dining programs. 

“My team just wants to do best by the students, and that's our common goal. We’re trying to provide them with a meal that feels like home away from home. We want to help them throughout their tenure here at the university, and make sure that they all feel welcome,” Alvarado said. 

One example is the expansion of halal dining options, which was made possible through partnerships with different vendors to provide more inclusive dietary options. He also creates themed meals that tie in with students’ interest and add excitement with curated menus. 

“I really like the versatility that we have to change our menus to keep students excited and to produce something different. That’s where I really like to see what are we able to create that is different: what the chefs are able to create down at the marketplace, or at the food truck, and all the venues that we have to create Pacific-oriented meals that make people look twice,” he said. 

He says Pacific has an opportunity to impact the industry as well by creating more demand for varied options. Partnering with local businesses for produce and baked goods is also a huge focus. 

“Marco’s passion for hospitality is evident every day. Whether greeting guests at The Grove, supporting students and staff or orchestrating an elegant plated dinner for a special event, he brings enthusiasm, creativity and care to every experience he helps create for the Pacific community,” Slafkosky said. 

Alvarado says he is deeply thankful for the honor.
